Healthy Banana Bread

1/3c. melted coconut oil

1/3c. honey or maple syrup

1 egg and 2.5 bananas OR 2 eggs and 2 bananas

1/3c. milk (you can use any kind, I use unsweetened almond)

1 tsp. baking soda

1 tsp. vanilla

1/2 tsp. salt

1 tsp. cinnamon

1.5 cups flour (I use organic, unbleached, unenriched, pure flour)

Beat together the oil and honey. add eggs and beat well. Mix in the milk and smashed bananas. Add the soda, salt, vanilla, & cinnamon. Lastly stir in the flour just until mixed. Add any add-ins here (chocolate chips, raisens, nuts, seeds, etc.).

Pour batter into a greased loaf pan, greased muffin cups, or mini muffin cups. Bake at 350 for 50-55mins (loaf), 25-30 mins (muffins) 20 mins (mini muffins).
